Jeyas - Coconut Burfi

Ingredients:
2 cups grated fresh Coconut, 1 cup Sugar, 1/2 cup fresh cream, a pinch of green CardamomPowder, 2 tablespoons powdered Sugar, 1/2 tablespoon Ghee.

Procedure:
Heat a non-stick pan on medium heat. Add the coconut, sugar, cream and cardamom powder and cook, stirring continuously, for fifteen minutes or till the mixture turns a golden brown.
Remove from the heat and add the powdered sugar and mix.
Grease a thali with the ghee and pour in the coconut mixture and spread evenly.
Cool and cut into diamonds or squares and serve, store in an airtight container in the refrigerator for up to a week.
