Ingredients:
Coconut Milk - 250ml, 1 large banana, cut into 1/2 - inch
thick and 2 1/2 - inch long slices, a pinch of Salt, 3/4cup - Rice Flour, Banana Leaves, cut into 6-inch squares, 1/3cup - white Sugar.
Procedure:
Mix together the rice flour and sugar in a thick - bottomed pan.
Add the coconut milk and mix well. Add the salt and heat the mixture over low heat till it comes to a boil simmer till thick. Set aside to cool.
Put one heaped tablespoon of the mixture in the centre of a banana leaf. Place a piece of banana over it and cover it with another heaped tablespoonful of the mixture. Wrap the banana leaf over the mixture to make an envelope.
Heat some water in a steamer and steam the cakes for about twenty minutes.
Cool to room temperature and serve.
