Jeyas - Corn And Bean Burritos

Ingredients:
100 grams Sweetcorn kernels, 250g sprouted beans, blanched, 4 refined flour tortillas, 1/2 cup grated mozzarella cheese, salt to taste, 10-12 Black Peppercorns, crushed 1 tbs Lemon Juice, 1 medium Tomato chopped, 1/2 cup shredded lettuce, 2 spring Onions chopped, 2 Green Chillies chopped, 1/2cup - salsa, chilled Sour Cream, to serve.

Procedure:
preheat the oven to 200 degree c/400f Gas mark 6. Mix the cheese, salt, crushed peppercorn, lemon juice and sprouted beans in a bowl.
In another bowl, mix together the tomato, lettuce and spring onions thoroughly. Add the corn and green chillies and mix.
Place the tortillas on a plate. Layer equal portions of the cheese and bean mixture and the corn and tomato mixture on each tortilla. Sprinkle the salsa on top and foldeach tortilla over.
Arrange the tortillas in a baking dish and bake for twenty minutes. Serve hot with the chilled sour cream.
