Ingredients:
30 five-inch round spring roll wrappers. 1cup - crumbled cottage Cheese, 1/2cup - minced mixed Vegetables (cauliflower, french beans and green peas), 1 tbs - chopped fresh Coriander, 1/4 tsn - black pepper powder, salt to taste, 2 tbs oil + for deep-frying, 10 garlic cloves, chopped, afew spring onion greens, 1/2cup - sweet chilli sauce.
Procedure:
To make the filling, mix together the cottage cheese, vegetables, chopped coriander, pepper powder and salt.
Heat two tablespoons of oil in a non-stick work, add the garlic and saute until fragrant. Add the cottage cheese mixture and stir-fry for three to four minutes.
Place one tablespoon of the filling in the centre of each spring roll wrapper, and gather the edges together in pleats to make a bag (potli).
Tie the bag tightly around the filling with a strip of spring onion green stalk. Trim the excess wrapper and spring onion.
Heat plenty of oil in a deep non-stick wok and deep fry the bags until golden. Drain on absorbent paper. Serve hot with sweet chilli sauce.
