Jeyas - Vegetable Rolls

Ingredients:
10-12 french Beans, finely chopped, 2 medium Carrots, finely chopped, 2 large Potatoes, finely chopped, 2 tbs oil + for deep-frying, 1/2 tsp - Garam Masala powder, 1 1/2 tsp Red Chilli Powder, 1 1/4 tsp dried Mango Powder, salt to taste, 4 bread slices, 50g Semolina, green chutney, as required.

Procedure:
Heat two tbs of oil in a non-stick pan and saute the French beans, carrots and potatoes till all the moisture evaporates and the vegetables are slightly tender.
Mash them slightly while hot. Add the garam masala powder, chilli powder, dried mango powder and salt. mix well.
Soak the bread slices in water for a couple of seconds and then squeeze out thoroughly. Add to the vegetables. Mix well and shape into long thick rolls.
heat sufficient oil in a kadai. Coat the rolls with the semolina and deep-fry over medium heat till golden brown and crisp. Drain on absorbent paper.
Serve hot with green chutney.
