Ingredients:
1 cup - skinless split Green Gram, soaked, 2 pinches of Sugar 2 tsp + 2 tbs Oil + for greasing, 2-3 Green Chillies, 2 tbs chopped fresh Fenugreek, 2 tsp - Gram Flour, 2 pinches of Asafoetida, 1/4 tsp - fruit salt, Salt to taste, 1/2 tsp - Mustard seeds, 10-12 curry leaves.
Procedure:
Blend the soaked green gram in a blender with the green chillies
and a little water. transfer into a bowl.
Add the fresh fenugreek, gram flour, one pinch of asafoetida, fruit salt, sugar, two tsps oil, salt and mix well to make a thick batter.
Pour into a greased thali and stream in a streamer for about 20 minutes. Remove, cool slightly and cut into pieces.
Heat one tbs of oil in a small non-stick pan. Add the mustard seeds, curry leaves, and the remaining asafoetida. Mix and pour over the dhokla.
Serve hot with green chutney.
